Antioxidant and Antimicrobial Agents from Avocado (Persea americana) Seed Extract Encapsulated in Gum Arabic through Spray Drying Method

In this work, the objective is to utilize avocado seed extract as a cheap alternative source of active compounds and was successfully encapsulated using gum arabic by spray drying an antioxidant antimicrobial agent. First, were extracted from solvent n-hexane followed separation rotary vacuum evaporator. Next, encapsulation agent added form emulsion, then spray-dried with air at temperature 140 °C. The mass ratio varied extract: 5:5, 5:10, 5:15, 5:20. Then, particle morphology, yield, moisture content, efficiency, loading capacity, chemical groups, activity, antibacterial ability analyzed investigate performance particles. Among ranges studied, extract–gum 5:10 exhibited best properties yield powder, efficiency 49.78%, 3.43%, 7.33%, respectively. particles have smooth surface, crackless, lower indentation, single-core structure average diameter 4.60 ?m. Besides, stability activity decreased 2.36%, 94.82% 92.46% for four weeks storage. They also performed against E. coli S. aureus, which maintained after seven days.
